Substance Wines was started by Waters Winery Founder Jason Huntley, Waters Winery Winemaker Jamie Brown and Gramercy Cellars owner Greg Harrington. Greg Harrington is the founder of and winemaker for Gramercy Cellars, as well as the co-owner of 21 Grams (with Jamie Brown), two boutique wineries in Walla Walla, WA. Prior to founding Gramercy Cellars, Greg was a Partner and Director of Beverage for BR Guest Restaurants and James Hotels, overseeing the wine and alcohol programs for 15 restaurants and hotels in New York, Las Vegas, Scottsdale and Chicago. Prior to joining BR Guest, Greg served as Wine Director and Associate Partner for the Wolfgang Puck Fine Dining Group which includes Spago, Postrio and Chinois. At 26, he was the youngest American to earn the title of Master Sommelier. He is a 1992 graduate of the Cornell School of Hotel Administration, In 2008, Seattle Magazine named Greg as “Best New Winemaker in Washington” and Gramercy “Best New Winery.” Greg is a regular guest lecturer for undergraduate and graduate beverage management courses at the Cornell Hotel School.
The grapes for Substance Cabernet Sauvignon are sourced from some of the best vineyards in Washington State: Pepper Bridge, Forgotten Hills, Nostra Terra, Phinny Hill, Sagemore, Dwelley, Seven Hills, Portteus and Gramercy Estate.
Walla Walla is full of small, artisan wineries: It contains more than 85 wineries on 1,600 vineyard acres as opposed to Yakima Valley’s 40 wineries on 11,000 vineyard acres. Walla Walla Valley’s long, warm growing season and sparse rainfall, not to mention the mineral-rich layers of soil built up over thousands of years, create a perfect climate to grow high-quality grapes. 1. A clever and fun concept…check out their website at www.substancewines.com. A play on Chemistry’s periodic table of elements …the Substance Team have re-imagined it as the Washington State Periodic Table of Wines of Substance. Their chart includes elemental-type symbols for more than two dozen different varietals produced in Washington (e.g., Me for Merlot, Cs for Cabernet Sauvignon), which neatly translate into sleek, cool graphics for wine labels. They goal was to create something entirely fresh; something unusual and compelling. They targeting a young, fresh audience, they envisioned a brand that would graphically highlight each distinct Washington state varietal they produced.
2. “Wine is intimidating. With our interactive Web site, the cheekiness and fun way it’s presented, it takes away the intimidation factor and adds an educational element,” says Jamie Brown, the 42-year-old winemaker at Wines of Substance, Waters Winery and 21 Grams.
“I didn’t want a 19-wine portfolio, but I did want to eventually try making every varietal found in Washington state, even if it was just 75 cases of Counoise,” Brown says. So he and his partners (founder Jason Huntley and Greg Harrington, also a partner in 21 Grams and winemaker at Gramercy Cellars) created Wines of Substance. “We don’t consider it a ‘second label,’ but the sister winery to Waters and Gramercy.”
3. Flavor Profile: Another fabulous wine from Washington State. Aromas of pencil shavings, cigar, herbs, cedar and mocha complement ripe cassis, plum and blackberry. This wine shows a fantastic balance of firm acidity, soft integrated tannins and moderate alcohol.
