Apollonio is a family wine-making company founded in 1870 by Noe’ Apollonio. Its orientation towards high quality came from Salvatore Apollonio, the third generation, who installed the first bottling line. Marcello and Massimiliano Apollonio, the fourth generation, took over the management in 1995. Their focus has been on expansion of company-owned vineyards, and employment of the most advanced technology in vinification, aging and storage of the finished products. With worldwide distribution and enthusiastic press, Apollonio has become the acknowledged quality leader in Salento-area wines.
Copertino is made from a blend of grapes emphasizing Negroamao (70%) with Malvasia Nera (15%), and Montepulciano (15%). While similar to Salice Salentino in terms of soil (calcareous clay), climate (hot, dry summers), head-pruned vines and hand-harvested grapes, the fine distinctions of microclimate and the larger ones of grape blend make Copertino a bigger, longer-lived wine. Indeed, Copertino is the appellation chosen for Apollonio’s only reserve wine, DiVoto.
Grapes are fermented in stainless steel for 30-45 days, depending on the vintage. Ageing takes place in small French and Russian oak barrels for eight months, followed by eight months in bottle.
